Description
Curcumin is a yellow pigment extracted from the rhizome of turmeric, which is a phenolic pigment. Curcumin is an orange-yellow crystalline powder with a slightly bitter taste and is insoluble in water. It is mainly used for the coloring of sausage products, canned food, and soy sauce products in food production. Curcumin has the functions of lowering blood lipids, anti-tumor, anti-inflammatory, choleretic, and antioxidant. Curcumin is currently one of the largest natural food colorings in the world and is a food additive approved by the World Health Organization, the U.S. Food and Drug Administration, and many countries.
